Crawfish Cream Sauce

Ingredients:
-1 medium yellow onion diced
-1 green bell pepper diced
-2 celery hearts diced
-2 tbs all purpose flour
-1 tbs tomato paste
-1 tbs garlic paste
-3 tbs unsalted butter
-3/4 can of fire roasted tomatoes
-2 tbs Kindlin’ Cajun Blend (or your favorite Cajun seasoning)
-2 tsp Worcestershire sauce
-1/2 cup heavy whipping cream
-1/2 lemon squeezed
-1 1/2 cup chicken stock
-1lb. Crawfish tails
-Dice all your vegetables
-Melt butter over medium heat, once melted add your diced trinity and sauté (4-6 minutes) once softened, stir in the garlic and tomato pastes until they dissolve (about 1 minute)
-Add flour, incorporate well and cook down (about 2 minutes) then add diced tomatoes, Cajun seasoning, w sauce, and stir well.
-Slowly stir in broth until incorporated and simmer for 2 minutes before adding heavy cream, crawfish tails and lemon juice.
-Reduce heat to a low simmer for about 10 minutes until the sauce begins to thicken.
*Adjust seasoning if necessary, I usually add a little more Cajun seasoning because I want spice.
Serve hot over the dish of your choice!
