Classic Southern Smoked Chicken Salad

The best part about smoked chicken?

Making chicken salad with the leftovers!

Ingredients:

-2 cups smoked chicken, diced (leftovers from a smoked bird are perfect)

-1 cup mayonnaise (Recommended: Duke’s or Blue Plate for that classic Southern flavor)

-2–3 celery hearts, diced (Adds crunch and freshness)

-3–4 green onions, diced (Gives a mild, oniony bite)

-4 dill gherkins, diced (Better texture and flavor than typical sweet relish)

-1 tablespoon BBQ rub, or more to taste (Suggested: our Woodpecker blend is perfect for this recipe, but any favorite BBQ rub works. Adds an extra layer of smoky, sweet, & savory)

*Combine all ingredients into a bowl and mix well. 


To Assemble the Sandwich:

-Mix all the salad ingredients together in a bowl until well combined.

-Toast a brioche bun.

-Add a bed of romaine lettuce to the bottom bun.

-Spoon on a generous heap of the chicken salad.

-Top with a thick slice of tomato.

-Add the top bun and enjoy!

-Smoky + creamy + crunchy + tangy = super satisfying.

-The BBQ rub gives it a punch of flavor, while the gherkins and celery keep it bright and crisp.
